CHICKEN SEEKH KABAB

Chicken Seekh Kabab Recipe is packed with Kabab goodness. Minced chicken is mixed with chopped onions and indian spices, shaped onto skewers and grilled to perfection – this makes a perfect starter.


Ingredients:

· Chicken – 250 gm (minced)

· Garlic – 10-12 cloves

· Ginger - 1 inch

· Green chillies - 2-3 nos.

· Onions - 2 medium sized

· Fresh mint leaves - 3 tbsp (chopped)

· Fresh coriander leaves - 3 tbsp (chopped)

· Red chilli powder - 1 tbsp

· Turmeric powder - ½ tsp

· Coriander powder - 2 tbsp

· Cumin powder (jeera) - 1 tsp

· Garam masala - 1 tsp

· Black salt - 1 tsp

· Pepper – ¼ tsp

· Salt

· Ghee - 1 tbsp

· Live charcoal + ghee

· Bamboo skewers as required

· Ghee/Butter for grilling

· Lemon (for serving)

· Chat masala (for serving)


Method:

· Add the garlic, ginger, green chillies and onions in a food processor or a manual hand chopper and chop them finely.

· Remember not to use a grinder, as you may end up making the paste.

· Transfer the chopped mixture to a muslin cloth and squeeze out to remove excess moisture.

· Take a mixing bowl, add the chopped mixture and thoroughly washed minced chicken, further add freshly chopped mint and coriander leaves and other powdered spices, Salt & pepper to taste and ghee, mix and combine well.

· Make space in between and place a bowl, place a live charcoal in the centre and add few drops of ghee, cover and smoke for 5-6 minutes. (completely optional)

· Dip your hands in water to prevent the chicken mixture sticking to your palms while shaping it over a bamboo skewers.

· Set a pan on medium heat, add ghee/butter and grill the seekh kabab from all sides until golden brown in colour. Add ghee or butter at regular intervals for getting the golden colour as well as charred flavour.

· Your chicken seekh kabab is ready to be served, serve hot by squeezing some fresh lemon and sprinkling some chaat masala, serve with chutney and some fresh mint leaves and sliced onions.
