Chibud Dhonas or Mash melon Cake baked in a Frying Pan. ❤️ This is a Classic Goan/ Konkani delicacy. It's usually made using ripe jackfruit or big cucumber but here I have used chibud to make these delicious dhonas.

Ingredients
· Rava – 1 cup
· Mashmelon pulp – 2 cups
· Jaggery – 1 cup or adjust as per taste
· Grated coconut – ½ cup
· Cardamom powder – ¾ tsp
· Ghee – 2-3 tbsp
· Pinch of salt
· Chopped cashew nuts (optional)
Method
· Wash the Chibud well and cut it into small chunks by removing outer skin as well as centre core (seeds).
· Take a pan add rava and dry roast for 1-2 mins, then add ghee and roast the rava till it turns aromatic or light golden brown. You can add the chopped cashew nuts while roasting the rava.
· Now turn off the flame and add jaggery, mash-melon pulp, grated salt to taste & cardamom powder. Give a very good mix and turn on the flame.
· Keep mixing continuously. Mix until it attains a pouring consistency (neither too thick nor watery.
· Now take a nonstick frying pan, grease with ghee and transfer this mixture, use a spatula to set it properly, and cover with turmeric leaves.
· Put the lid and let it cook on low flame for 30-40mins, this will give a nice crust to the bottom of the cake.
· Allow it to cool before you turn it upside down.
· Cut into pieces and eniov with your family and friends.
***I had made double the quantity so I took a tava poured sand on it and kept the cake tin on it with a lid to bake. This method also works out fine, the crust turns out to be perfect.
