CHERMOULA CHICKEN, GARLIC BUTTER RICE & STIR FRIED VEGGIES

Grilled chicken marinated with Chermoula sauce - a bright and flavorful North African condiment. Served with stir fried veggies and garlic butter rice, an easy dish with few ingredients which is perfectly flavoured and is utterly delicious.


CHERMOULA CHICKEN

Ingredients:

· Chicken Breast (boneless) – 500 gms

· Black pepper – ½ tsp

· Lemon juice – 1.5 tsp

· Salt

For Chermoula Sauce:

· Olive Oil – ¼ cup + 1 tbsp

· Coriander seeds – 1.5 tsp

· Cumin seeds – 1 tsp

· Garlic Cloves – 3-4

· Parsley Leaves – ½ cup

· Cilantro/Coriander Leaves – ½ cup

· Fresh Thyme leaves – 1 tsp

· Paprika – ½ tsp

· White Vinegar – 1 tsp

· Zest of lemon – 1 tsp

· Lemon Juice – 1 tbsp

· Salt


GARLIC BUTTER RICE

Ingredients:

· Olive Oil – 1 tsp

· Butter – 1 tbsp

· Garlic – 1 tbsp (chopped)

· Cooked Rice regular/ Basmati – 1.5 cups (cooled)

· Oregano - 1 tsp

· Lemon Juice – 1 tsp

· Salt

· Parsley Leaves – 1 tbsp (Finely chopped)


Method:

CHERMOULA CHICKEN

· Firstly, flatten out the chicken breast piece with the hammer to make them completely flat. Or use a knife to slit and make it thin.

· Marinate the chicken for 20-25 minutes with black pepper, lemon juice and salt.

· For making the chermoula sauce, first take a pan and slightly dry roast the coriander seeds and cumin seeds until aromatic.

· Now take a small mixer jar add olive oil, roasted coriander and cumin seeds, garlic Cloves, parsley leaves, coriander leaves, thyme leaves, paprika, white vinegar, lemon zest, lemon juice and salt. Grind them all together to make a paste (not very fine). Your chermoula sauce/marinate is ready.

· Now marinate the chicken pieces with the chermoula sauce and set it in the refrigerator for at least 45 minutes to 2 hrs for marination. This will make the chicken more tender and juicier. Keep little paste aside to add it the cooked chicken before serving.

· Pre heat the oven for 10 minutes, take a baking dish and lightly brush with oil, keep the marinated chicken on the baking dish and grill the chicken at 180- 190 degree Celsius for 15-18 minutes, until is completely cooked.

· You can apply the reserved sauce to the cooked chicken before serving.

· Serve it hot with stir fried veggies or Parsley rice or Garlic butter rice.


*** If you do not have an oven, you can cook the marinated chicken on grilled pan. cook the chicken for 5-6 minutes on each side, till it is completely cooked.


GARLIC BUTTER RICE

· Take a wok and set it on medium high heat, add oil and butter.

· Add chopped garlic and stir for 2-3 minutes.

· Now add the cooked rice which is completely cooled.

· Add herbs, lemon juice and salt. Give a good mix and cook for 1-2 minutes.

· Garnish with parsley leaves and serve it hot with grilled chicken or any dish of your choice.
