CHEESY SPINACH AND CORN SANDWICH

Cheesy Spinach and Corn Sandwich is a toasted/grilled sandwich recipe prepared with a creamy and cheesy filling made of spinach, sweet corn, flour, milk, and cheese. It is also flavoured with garlic, pepper and red chili flakes. Easy to prepare and tastes better when served hot with tea or coffee .


Ingredients:

· Bread Slices

· Sweet corn - 200 gms

· Spinach – 2 bunches

· Butter – 1 tbsp

· Olive oil –2 tsp

· Garlic - 1 tbsp

· All-purpose flour – 1 tbsp

· Milk - 200 ml

· Salt to taste

· Black pepper powder

· Chilli flakes

· Mozzarella cheese

· Butter for brushing


Method:

· Wash the spinach leaves and keep it aside.

· In a pan, heat water and add palak leaves. After a minute remove it from the water and add to ice cold water. This will help to retain the bright green colour of the palak/spinach leaves. Drain the water and roughly chop it.

· Boil the sweet corn and keep it aside.

· Now heat olive oil and butter in a skillet, add garlic and stir well. Add all-purpose flour and sauté it well.

· Now add the milk and mix it well. See to it that there are no lumps formed.

· Bring it to a boil and add salt, black pepper powder, chilli flakes and mix it well.

· Now add the blanched and chopped spinach leaves and boiled sweet corn.

· Cook for 2-3 mins and add the mozzarella cheese and mix it well.

· Now pour this in another container.

· To make the sandwiches take 2 bread slices and cut its edges (optional). Spread the butter on both the slices and spread the prepared spinach corn mixture over it.

· Cover it with another slice of bread.

· Place it on a grill machine and brush it with butter. 1

· Grill till it turns golden brown in colour.

· Cut it into half or triangle.

· Serve it hot with ketchup.


*** If you do not have a grill machine you can use a grill pan or a normal pan to make these sandwiches.
