CHAVDE/MANDIGE for Ganpati Bappa 🙏🏻🌺

Karnataka special Chavde also known as Mandige for our Ganpati Bappa🙏🏻🌺

This is a scrumptious melt in mouth sweet which is deep fried and sweetened with sugar powder, cardamom powder and roasted sesame seeds💝💕

This requires too much of perfection while making it. If we overcook the Puri it might break and if we cook it less in the oil, it won't turn crispy.

Ingredients:

For the stuffing:

· Powdered sugar – 1 cup approx.

· White sesame seeds – 1.5 - 2 tbsp (roasted)

· Cardamom Powder – 1 tsp

For the Dough:

· Maida flour – 250 gms

· Ghee – 2 tbsp

· Very very little salt to taste

· Water as required

Oil for deep frying the Chavde/ Mandige.


Method:

· In a heavy bottomed pan, dry roast the seasme seeds until it gets roasted properly. Let it cool down completely. Once cooled, add in the powdered sugar, roasted sesame seeds and cardamom powder. Mix it well to combine all the ingredients and keep it aside.

· Take a large mixing bowling, add maida, little salt and hot ghee. Don’t add water, mix the flour using the fingers, see to it that the ghee is mixed in nicely.

· Now start adding very little water to bind the dough. Knead it into a semi hard dough.

· Let the dough rest for 12-15 minutes.

· Knead once again after giving rest and divide into very small equal dough balls.

· Apply little flour and then roll the puris

· Roll it out like a poori into 5 inch to 6 inch diameter circles. You can roll at least 20 at a time and keep it aside. Place the rolled puris separately so that they don’t stick to each other.

· Heat oil in a kadai and keep the flame on medium high heat.

· Once you drop the puri after 8-10 secs flip it and let it fry for 10 -12 secs and flip it again. After that remove it from the oil.

· Immediately sprinkle the sugar mixture over the chavde and then fold over half to form a semi-circle. Again, sprinkle the sugar mixture and fold once again.

· Set it aside to cool, you have to let it cool completely before storing it in an air tight container.

*** While frying you have to be very careful, if you remove it very quickly from the oil, it won’t be cooked properly. But if you leave it in the oil for too long, it will stiffen up and you will not be able to fold it. This dish requires little bit of experience to make it perfect and crispy.
