Vegetables have great nutritional properties and is absolutely delicious. Whenever you make any spicy dishes, the perfect cooling company is Raita. This can be served with any meal of your choice and it adds a lot of freshness to your meals.

Ingredients:
· Cucumber – 1 (finely diced)
· Carrot – 1 (grated)
· Tomato – 1 (finely chopped)
· Green chillies – 2 (finely chopped)
· Curd/ Yogurt – 1 cup
· Salt to taste
· Sugar – ½ tsp
· Black pepper powder – ¼ tsp
· Black salt – ¼ tsp
· Chat masala – ¼ tsp
· Finely chopped coriander leaves
Method:
· Wash and chop the vegetables and keep it aside.
· In a mixing bowl, add plain curd/ yogurt. Whisk well and add the salt, sugar, black pepper powder, black salt and chat masala. Give it a good mix.
· Now add the chopped vegetables and mix it well. Finally garnish with coriander leaves.
· Serve this salad/raita as a side dish along with any rice varieties lemon rice, mavinakayi chitranna, pulao or biryani of your choice.
