Capsicum Zunka is one of the most popular subzi from the state of Maharashtra. This zunka with capsicum goes well as a side dish when served with roti, chapati or rice.

Ingredients:
· Oil – 2 tsp
· Besan – ½ cup
· Oil – 2 tsp
· Mustard seeds – ½ tsp
· Cumin seeds – ½ tsp
· Hing – ¼ tsp
· Finely chopped Garlic – 5-6 cloves
· Curry leaves – 1 sprig
· Onion - 1 big (finely chopped)
· Green chilies - 2-3 (finely chopped)
· Capsicum – 4-5 medium size (diced)
· Salt to taste
· Turmeric powder – ¼ tsp
· Sugar as per taste (Optional)
· Lemon juice
· Finely chopped Coriander leaves
Method:
· Take a kadai with little oil and add besan.
· Roast the besan for about 7-8 minutes on medium heat until it gets light golden color and turns aromatic.
· Turn off the flame and transfer the roasted besan into a bowl.
· Now take a kadai, add oil in a pan.
· Once the oil heats up add mustard seeds, cumin seeds and let it splutter.
· Now add hing, garlic and fry well. Add curry leaves, green chilies and mix well.
· Add onion and sauté till the onion turns slightly brown in colour.
· Now add the capsicum and mix well. Add salt and turmeric powderand mix well.
· Cook on medium heat for about 3-4 minutes. Keep stirring occasionally.
· Once the capsicum is cooked well add the roasted besan and mix well. Now sprinkle little water and cover it with a lid.
· Cook on low to medium heat for about 6-8 minutes.
· Remove the lid, add sugar, squeeze lemon juice and mix well. Finally garnish with coriander leaves and mix well.
· This can be served as a side dish with rice or it goes well with roti, fulka or chapati.
