CAPE GOOSEBERRY JAM

Cape gooseberry is also known as Inca berry, Peruvian groundcherry, poha berry, goldenberry, husk cherry, physalis, ground cherry and golden berry. Cape gooseberry is a small, bright orange berry fruit that is related to the tomatillo. The fruit has a sweet, tropical and very unique taste. It is perfect to make an extremely delicious cape gooseberry jam.

An extremely delicious, uniquely flavoured jam with beautiful golden colour, titillates the palate. Can be served with bread and pancakes 🥞. Add a spoonful to your cake batter and the cake/ muffin becomes moist and flavourful.



Ingredients:

· Cape gooseberries, halved – 1 cup

· Water – ¼ cup

· Cinnamon stick - 1 inch

· Star anise - 1

· Sugar - ¼ cup

· Salt – 2 pinches

· Lemon juice - 1 tsp




Method:

· Take a pan roast the cape gooseberries for 4-5 minutes on medium heat while occasionally stirring.

· Now add water, mix and cook till the mixture comes to a boil.

· Lightly mash the mixture with the back of spoon till it turns pulpy.

· Add cinnamon stick and star anise and mix well.

· Add sugar and salt, mix and cook till the mixture thickens and gets the desired consistency.

· Finally add lemon juice and mix well. T

· Turn off the flame the pan and allow to cool completely.

· Transfer into an air tight jar and serve as required.
