Ingredients:
· Brinjal
· Hing
· Salt
· Tamarind
· Red Chili powder
· Turmeric powder
· Coriander powder
· Rava/ Semolina
· Oil
Method:
· Wash and cut the Brinjal into medium thick round slices and place them in a bowl. Add salt, hing and few pieces of tamarind. Keep it aside for 8-10 mins.
· Take a small plate, mix rava, turmeric powder, red chili powder, coriander powder and salt.
· Heat a frying pan and spread oil on it.
· Coat the sliced brinjal in rava and arrange the rava coated slices on the frying pan one by one.
· Spread oil from the sides of the pan. Cover and cook on medium flame.
· After few minutes, open the lid and flip to the other side, spread oil once again and fry for few more minutes.
· You can poke the centre with a knife or spoon, to check whether the brinjal is cooked and if it gets cut easily then it’s done.
· Enjoy this with any curry of your choice as an accompaniment.
