Chakli the spiral shaped savoury, a must for Diwali, along with sweets this savoury completes the faral to celebrate the festival.
Ingredients:
For the chakli flour:
· Rice – 4 cups
· Udid dal – 1 cup
· Moong Dal (yellow) – ½ cup
· Daliya (roasted chana dal)– 1 cup
· Cumin seeds (Jeera)
· Carom seeds (Ajwain)
· Butter – ½ cup
· Salt
· Water
· Oil for frying
Method: · Rinse the rice and lentils individually and drain well. Spread on separate paper towels so that it dries off. · Dry roast udid dal and moong dal till it turns light brown. · Roast cumin seeds, Carom seeds,daliya and rice till it little warm. · Allow all the roasted ingredients to cool completely. Blend all the roasted ingredients to a fine flour, can get it done from a mill. · Now, melt the butter. Add the butter to the flour, you can add sesame seeds, salt at this stage to the flour. · Start making a smooth dough using luke warm water. Let it rest for 12-15 mins. The dough should be a little stiff (not soft and not too stiff). · Take out a small portion of the dough and fill the greased chakli maker with the dough. · Make chaklis on a plate or plastic sheet or butter paper or parchment paper. · Heat oil in a deep pan. · Put the chaklis on high flame at the start and later reduce the flame to medium. Fry till they turn golden brown in colour. · Cool the chaklis and store it in an airtight container. *** Cups in my recipe refers to any measuring glass or Vati you have at home.
