Barnyard Millet Kheer (Oodalu Payasam in Kannada)

Barnyard Millet is also known as Samvat ke Chawal in Hindi Oodalu in kannada and is popularly used during the festivals. Barnyard millet is low in carbohydrates, but has a similar energy value to all the other millet.I have used the Barnyard Millet Raw by @biobasicsin that is grown in Pudukkottai.



Ingredients:

·       Barnyard Millet – Ÿ cup 

·       Chopped dry fruits (almonds, pistachios, cashew nuts, charuli and raisins)

·       Dry coconut chunks – 1 tbsp

·       Water – 2.5 to 3 cups

·       Grated coconut – Ÿ cup

·       Cardamom pods – 4-5

·       Milk – Âœ cup

·       Jaggery (adjust as per your taste) – Ÿ cup

·       Salt – 2 pinches

·       Ghee – 3-4 tbsp

 

Method:

·       Wash the Barnyard millet thoroughly, and soak it for 1 hour.

·       Take a kadai, add in ghee and sautĂ© the dry fruits till it slightly changes the color. Keep it aside once it’s done.

·       Now add little more ghee and add in the chopped dry coconut chunks. Keep it aside once done.

·       Now add more ghee and add in the drained barnyard millet, fry it in ghee.

Now add in hot water and cover it with a lid. Let it cook.

·       At the same time, take a mixer jar add in the freshly grated coconut, cardamom pods and milk. Grind it.

·       Now open the lid and check with your fingers whether the barnyard millet is cooked. Once it is cooked, add in jaggery, little salt to balance the taste and add the grounded coconut mixture.

·       Give a good mix and finally add the ghee and roasted dry fruits and dry coconut chunks. Give a good mix and turn off the flame.

·       Your healthy and delicious Barnyard Millet Kheer/ Oodalu Payasam is ready to be offered as naivedyam.
