BANANA BLOSSOM CHIPS

Ingredients:

· Banana florets – 1 – 1½ cup

· Curd – ¼ cup and water – 2 cups

· Maida – ½ cup

· Corn flour – ½ cup

· Red chili powder – 1 tsp

· Turmeric powder – ¼ tsp

· Garam masala – ½ tsp

· Pepper powder – ¼ tsp

· Chaat masala – ½ tsp

· Hing – ¼ tsp

· Curry leaves – 2 sprigs

· Salt

· Water

· Oil for frying

Method:

· Take fresh banana flower. Firstly, peel the petals and collect the florets.

· Some banana flowers will be slightly bitter so discard 2 - 3 outer petals.

· Clean the florets, remove the stigma and perianth (plastic like cover), this can be used to make banana blossom chips and use the heart to make vegetable. You can also add florets while making the vegetable.

· Take a large bowl, add curd and water. Whisk and mix it well.

· Now soak in cleaned florets for 8-10 minutes. Drain off and keep it aside.

· In large mixing bowl add maida, corn flour, red chilli powder, turmeric powder, garam masala, pepper powder, chaat masala, hing, curry leaves and salt

· Add water and prepare a thick batter. Now add in florets and coat it well.

· Heat a kadai with oil in it, deep fry in hot oil on medium flame.

· Remove the chips once it turns golden brown and crisp. Drain off excess oil over a tissue paper.

· Serve the banana flower chips immediately.
