Baingan ka bharta a popular Punjabi dish from the North Indian cuisine, made with a mash of roasted eggplant, onions, tomatoes, herbs and spices. Served with chapati.
Ingredients:
For roasting eggplant:
· Eggplant – 2 medium size
· Garlic cloves – 10-12
· Green chillies – 1-2
· Mustard oil to brush - 1 tsp
For tempering:
· Mustard oil - 1 tbsp
· Oil - 2 tbsp
· Onions - 2 big (chopped)
· Ginger - 1 inch (chopped)
· Green chilli - 1 (chopped)
· Turmeric powder – ½ tsp
· Red chilli powder – 1.5 tsp
· Salt
· Tomatoes - 2 big (chopped)
· Mashed eggplant
· Fresh coriander leaves - 1 tbsp (chopped)
Method:
· Make a slit in eggplant and stuff with garlic cloves and green chillies
· Brush the eggplant with mustard oil and roast until it is cooked on direct flame. Keep a rack if you wish too.
· Remove from flame, peel, mash and keep it aside. Remove the garlic and green chillies. Mash it and keep it aside.
· Now take a pan, add oil and sauté onion.
· Then add mashed garlic, mashed green chillies, ginger, green chillies, turmeric powder, red chilli powder, salt and sauté for 3-4 minutes.
· Now add the chopped tomatoes and sauté till the tomatoes are cooked nicely.
· Add the mashed eggplant and mix well, cook for 3-4 minutes and take it off from the flame.
· Garnish with coriander leaves and serve hot with any Indian bread of your choice.
· I have served this delicious baingan ka bharta with bajra roti.
