AKKI (Rice) SEVAI UPPITTU


This Uppittu is made using rice sevai and this is a beautiful breakfast option to start your day.

You don't have to actually bother yourself to prepare these Rice Sevai at home. You get the Rice Sevai pack, you just have to add boiling water to the sevai and keep it aside for 5 mins. Strain it and use it in any preparation of your choice.

I have used the Concord brand Rice Sevai which is easily available.

I have made upma that's Uppittu in kannada, you can also serve it hot with freshly grated coconut and sugar drizzled over it or with stew or with sweetened coconut milk.




Ingredients:

· Oil/ Ghee – 1.5 tbsp

. Peanuts - 1.5 tbsp (you can add cashews too)

· Mustard seeds – ¾ tsp

· Urad dal – 1 tsp

· Dried red chillies – 1-2 broken

· Curry leaves – 1 sprig

. Turmeric powder - less than ¼ tsp

· Salt

· Akki Shavige – 1.5 cup

· Sugar – 1 tsp (optional)

· Grated coconut – 1.5 tbsp

· Chopped coriander leaves

. Lemon juice - optional


Method:

· Heat oil/ ghee in a pan, add peanuts & cashew, roast it till it starta turning crisp. Now add mustard seeds.

· Once the mustard seeds crackle, add urad dal, dried red chilies, and curry leaves.

· Now add turmeric powder & salt. Give a good mix.

· Now you can add the rice sevai that is completely cooked.

· Add sugar it’s completely optional, garnish with grated coconut and coriander leaves.

Drizzle lime juice if you like it.

· Serve it hot for breakfast or as evening snack.
