AAM PANNA

Aam Panna is a refreshing Indian summer beverage made using green raw mangoes and spices for additional flavours. It is a desi hit which is not only refreshing but also energizing. It helps you get hydrated in an instant and aids in battling scorching heat.


Ingredients:

· Raw mangoes – 3 big ones

· Jeera powder - 1 tbsp

· Black salt - 1 tbsp

· Black pepper powder - 1 tsp

· Jaggery - 500 gm (can substitute with sugar)

· Salt to taste

Method:

· Roughly chop the raw mangoes and pressure cook it for 2-3 whistles by adding water.

· Let it cool down completely to the room temperature.

· Now using a spoon scrape the flesh from the skin.

· Now transfer the cooled soft raw mangoes to a blending jar, add jeera powder, black salt and black pepper powder, grind well into a fine paste.

· Take a pan and set it on medium low heat, and add jaggery and 1 cup water.

· Cook until one string consistency syrup.

· Now strain the blended paste and add this paste to the jaggery syrup.

· Mix well and heat the mixture for 5-6 minutes. Let it cool down completely.

· Aam panna concentrate is ready and it can be stored in the refrigerator in a well sterilized glass jar.

· Relish this refreshing drink by adding water to the concentrated aam panna.

· Stir well, add ice cubes. Garnish with mint leaves.

· To make it more presentable and tastier, rub the lemon juice to the rim of glass and dip the rim of the glass in chili and salt mixture. Then pour the aam panna in the glass and serve chilled.
